  • Celtic Gaul (before -52) : recipes based on the results of excavations ( charred seeds,
    bones, pottery residues, food isotopes), and on the
    works by historians and archaeologists specializing in protohistory.
  • Middle Ages : the recipes are based on culinary manuscripts from this period and their detailed analyses.
  • 1930s : selection of popular recipes, steeped in regional traditions and later listed in French cookbooks .
