The cast iron Dutch oven is experiencing a significant revival in French kitchens. Several factors contribute to this: distrust of fluorinated non-stick coatings (PFAS), the search for quality, environmentally friendly materials, a return to family cooking, and renewed interest in traditional recipes.

While the raw cast iron cauldron once dominated hearths, and later pioneers and explorers for outdoor wood-fired cooking, it had to evolve and transform to meet the domestic demands of modern stoves. Gone are the tripods, campfires, and rocky terrains; it now rests more sedately and flat on a stove.

The Dutch oven is the culmination of the cauldron's metamorphosis and still retains its main characteristics:

  • The material remains the same: cast iron, without any synthetic coating.
  • Both are designed to evenly distribute heat, allowing for more gradual cooking.
  • They enable generous and convivial cooking.

Two shapes dominate the market: round and oval Dutch ovens. The choice primarily depends on what you cook.

The round Dutch oven is the most versatile shape. Its geometry facilitates stirring, ensures good stability on cooktops, and is suitable for most dishes: stews, soups, ragouts, vegetables, no-knead bread, and cuts of meat.

The oval Dutch oven is designed for long pieces: whole poultry, roasts, ham hocks, legs of lamb, whole fish. Its elongated shape better accommodates these foods but distributes heat less evenly, and its stability on a round cooktop is slightly lower.

If you're buying your first cast iron Dutch oven, the round shape is often the most versatile choice. The oval Dutch oven is better suited for specific uses, especially long pieces of food.

Raw Cast Iron or Enamelled Cast Iron

Both versions have their advocates and their own qualities.

Enamelled cast iron is covered with a layer of vitrified enamel (molten glass fired at over 800 °C). This layer protects the cast iron from oxidation, facilitates cleaning, and provides a colorful appearance appreciated in modern kitchens.

Enamelled cast iron nevertheless has a few limitations to be aware of:

  • Enamel is less resistant to minor impacts.

  • Enamel tends to make food stick to the bottom of the Dutch oven.

  • Enamel remains sensitive to temperature fluctuations, which can weaken or crack it. Manufacturers themselves recommend gradual heating, advise against using the booster function on induction hobs, and generally limit oven temperature (often 260 °C maximum). Enamel is therefore less suitable for wood-fired cooking.

Raw cast iron is an alloy of iron and carbon, without any added coating. It follows directly from the traditional cauldron and can thus last for decades without losing its qualities. A quality raw cast iron Dutch oven is pre-seasoned by the manufacturer: a thin layer of vegetable oil is baked onto the metal before sale, creating a protection against oxidation and also forming a natural non-stick layer. This surface strengthens with use, nourished by heated fats: this is the seasoning.

Raw cast iron contains no synthetic coating: no PTFE, PFOA, or added PFAS coating. Cooking takes place directly on a simple iron and carbon alloy, protected by the seasoning.

Raw cast iron can have some limitations:

  • It can rust if stored in a humid environment and not properly seasoned.
  • It is not recommended to put it in the dishwasher, as this can damage the seasoning.

What is the weight of a 26 cm cast iron Dutch oven?

The weight of a cast iron Dutch oven directly depends on the amount of raw cast iron used. This means that the weight will be linked to its shape, the structure of its lid, and the thickness of its walls.

The wall thickness is an essential point to check:

  • Too thin, it does not diffuse heat evenly and makes the Dutch oven fragile.
  • Too thick, it unnecessarily heavy and makes it cumbersome to handle.

For a 26 cm diameter, Dutch ovens on the market generally weigh 5 to 6 kg with their lid. For comparable dimensions, a lighter Dutch oven contains less material with a thinner thickness and less thermal inertia. This results in a more fragile utensil and an increased risk of hot spots. Conversely, a Dutch oven weighing more than 6 kg empty becomes difficult to handle once full and can even damage induction cooktops.

Compatibility with your heat source

While it's obvious that cast iron cauldrons are not suitable for modern cooktops, can we say that all Dutch ovens are?

No! Before buying your Dutch oven, always check the manufacturer's instructions. The general principle remains simple: cast iron handles all types of heat very well, but the shape of the bottom, the type of coating, and added elements can limit certain uses.

Gas, electric hob, ceramic hob: a flat-bottomed cast iron Dutch oven is generally compatible. On a ceramic hob, avoid sliding it to prevent scratching the surface. As cast iron is heavy, it should be lifted rather than moved sideways.

Induction: cast iron is naturally ferromagnetic, making it perfectly suited for induction. The essential point is the base: it must be flat, regular, and wide enough to ensure good contact with the hob. A Dutch oven with a curved, irregular, or too small base may be less efficient, even if the material is compatible. Always check the manufacturer's "induction compatible" mention.

Electric oven: raw cast iron handles oven use very well. The limit rarely comes from the cast iron itself, but rather from the knob or any attached elements. A cast iron knob molded into the mass allows unlimited use related to a coating or attached part. A plastic, resin, or screwed metal knob often limits the Dutch oven to 180 to 260 °C depending on the manufacturer.

Wood-fired oven and fireplace: raw cast iron is particularly suitable for high temperatures, wood-fired ovens, and close proximity to embers. Enamelled cast iron requires more caution: thermal shocks and direct contact with hot embers can weaken or crack the enamel.

Outdoor wood fire: a flat-bottomed Dutch oven can be used near embers or on a stable grill, but it is not designed as a three-legged cauldron. Handles and Lid

These elements are often overlooked when purchasing, yet they directly determine durability and ease of use.

Side Handles

Opt for one-piece cast iron handles, molded as a single unit with the Dutch oven. They have no screws or rivets, minimizing weak points. They withstand high temperatures in the oven, wood-fired oven, and fireplace without any limitations related to assembly.

Attached handles made of screwed or riveted metal are less durable. Screws can loosen over time, the attached metal heats and expands differently from cast iron, and the assembly can deform after several high-temperature cycles. Avoid these for a long-term purchase.

The Lid

Two shapes exist: flat or domed.

The flat lid, sometimes equipped with internal nubs, allows condensation to drip back onto the food, preserving moisture.

The domed lid offers a larger internal volume, useful for rising bread, tall roasts, or whole poultry.

For versatile use, the domed lid with internal spikes combines two interesting advantages: condensation is better distributed throughout the contents (self-basting effect of the spikes), while offering a larger internal volume for tall recipes. This configuration is still uncommon, but particularly well-suited for slow cooking, breads, and tall dishes.

The lid must also be heavy and perfectly fitted to the Dutch oven. A lid that does not close hermetically allows steam to escape, unbalances slow cooking, and requires compensation with more liquid.

The lid handle

This is one of the points where Dutch ovens differ significantly, and one of the most neglected.

The handle cast into the mass, molded in one piece with the cast iron lid, is the most robust choice. No screws, no attached knob, fewer mechanical weak points. It withstands the oven, wood-fired oven, and fireplace without limitations related to assembly. No risk of differential expansion, no risk of loosening over time.

Attached knobs, whether made of screwed metal, heat-resistant resin, or plastic, pose several problems:

  • Temperature limit in the oven: often 180 to 260 °C depending on the manufacturer
  • Risk of loosening over time with hot-cold cycles
  • Differential expansion between the knob and the cast iron lid
  • Unsuitable for wood-fired ovens, fireplaces, and live embers

For a Dutch oven intended to last and to be used regularly in the oven, a handle cast into the mass is the most consistent choice.

Robustness: what makes a Dutch oven durable

Beyond the choice between raw and enameled, the durability of a Dutch oven depends on three essential technical points, often not obvious at the time of purchase.

Monobloc design. A Dutch oven cast in one piece, without attached parts on the body, lid, or handles, greatly limits mechanical weak points. No screws to loosen, no knob to expand differently, no material junctions. This is probably the most crucial criterion for transmission over several decades.

Consistency of the cast iron. Poorly cast iron shows visible thickness variations or surface defects. Well-cast iron has regular walls, a uniform bottom, and good thermal performance. This regularity determines both cooking and longevity.

Pre-seasoning with vegetable oil. A quality raw cast iron Dutch oven is delivered already pre-seasoned by the manufacturer: a thin layer of vegetable oil is applied and then baked onto the metal before sale. This initial protection allows for immediate use and initiates the seasoning process, which will strengthen with successive cooking. A non-pre-seasoned Dutch oven requires the consumer to perform this step themselves, which is technically feasible but less convenient.

Few configurations offer durability comparable to that of a raw monobloc cast iron, especially when it is pre-seasoned and designed without attached parts.

Several common mistakes occur when purchasing. Here are the main ones to be aware of.

A bottom poorly suited for induction. Cast iron is naturally compatible with induction, but the bottom must be flat, regular, and make good contact with the hob. Before buying, check for the "induction compatible" mention and observe the quality of the bottom. An uneven bottom heats less efficiently and can make use less comfortable.

Ill-defined "ceramic" coating. Some coatings presented as "ceramic" actually encompass a wide variety of compositions. If you are looking for a healthy Dutch oven, ask for the precise composition and compliance with European food contact regulations.

Limited-life attached knobs. A screwed plastic, heat-resistant resin, or attached metal knob limits the Dutch oven to 180 to 260 °C in the oven, depending on the manufacturer, and generally excludes use in wood-fired ovens or fireplaces. For a durable purchase, opt for a lid handle cast into the mass.

Lids that are too light. A cast iron Dutch oven should ideally be accompanied by a cast iron lid that is also heavy and well-fitted. A lid that is too light allows more steam to escape and reduces the benefit of slow cooking. For braised dishes, the lid is as important as the body of the Dutch oven.

Fragile attached handles. For a durable purchase, opt for integrated side handles cast with the body of the Dutch oven. A full Dutch oven can weigh over 6.5 kg. The handles must allow for a secure grip, even with thick oven mitts.

Purchasing without checking the actual weight. A cast iron Dutch oven is heavy, especially when full. A 26 cm size already weighs over 5 kilograms empty. Before choosing a large capacity, consider its actual use: moving it from the hob, placing it in the oven, serving at the table, cleaning.
